Jewels of the garden

This is what gardening to me is all about! Having something wonderful to taste in the dead of winter when it's cold and nasty and you long for summer. You can reach into the pantry, open a jar of home made jam, close your eyes as you bite into a slice of bread and jam and be transported back to summer for just a little while. This is my mock raspberry jam and I just had to have a picture when I saw the sunlight glistening through the jam and making it look like red jewels. This is one of the easiest jam recipes ever and is a way to use up your end of season green tomatoes. Here's the recipe:

4 cups green tomato puree (puree in blender or food processor)
4 cups sugar
blend and stir on med. high till boiling then reduce heat and simmer for 20 minutes.
At the end of 20 min. remove from heat and stir in 2 three oz. pkgs. of raspberry jello. Mix well until the jello is dissolved and pour into clean jelly jars kept warm in a hot water bath. You have a choice of storing them in the refrigerator as frig jam or processing for 15 min. in a hot water bath. I like to process mine to save space in my fridge for other things. This makes a great gift at holiday time and is very tasty. People are amazed when told its made from green tomatoes. Enjoy!
